Homemade Three Cheese Macaroni & Cheese

Ok...so I have this great new recipe I found for homemade mac & cheese...it's a three cheese recipe and it is super yummy! Everyone has been asking about it so I though I'd post it here.

1 (16 oz) package elbow macaroni (or your favorite shape)

1/4 c. butter or margarine

1/4 c. all purpose flour

1/2 tsp. salt

1/8 tsp. pepper

3 c. milk

2 c. shredded cheddar cheese

1 1/2 c. shredded swiss cheese

1/2 c. grated parmesan cheese

Cook macaroni according to package directions. Meanwhile, in a 5 qt. dutch oven over medium heat, melt butter. Stir in flour, salt, and pepper until smooth. Bring to a boil; boil and stir for 2 minutes. Gradually add milk, stirring constantly. Reduce heat to low; add cheeses and stir until melted. Drain macaroni; add to cheese sauce and stir until well coated.

Place in 9X13 pan and sprinkle with a handful of shredded swiss and cheddar...just enough so that it will brown in the oven on top. Place into preheated oven (350) and bake until golden brown.
